Okonomiyaki

Today i will post about Okonomiyaki or Japanese pancake dish. Some days ago, after breaking the fast i still want to eat something tasty. Then i looked at my refrigerator and found i had cabbage, dried ebi, and also eggs.. Hmm..okonomiyaki sounds great to ate :) 



and guess.. what is my husband and my son reaction, when i told my husband and my son about my idea? they shouted 'yeaaayyy..!! agreee..!!" :D

i often make okonomiyaki, because all of my family love it.. and i almost never used instant flour for this. My favourite recipe is from Just One Cook Book.

The original recipe is from Nami-Just One Cookbook. Please check in the link if you want to know the original recipe. And this is the recipe modified by me :

OKONOMIYAKI RECIPE - mamaDhiNar Kitchen:
  • 1 cup all-purpose flour (1 cup tepung serba guna)
  • ¼ tsp. salt (1/4 sdt garam)
  • ¼ tsp. sugar (1/4 sdt gula)
  • 2 stalks leeks, finely chop (2 batang bawang prei, iris tipis)
  • ¾ cup dashi stock, or ¾ cup water with 1 tsp. Hondashi powder (3/4 kaldu dashi atau 3/4 air dengan 1 sdt bubuk dashi)
  • 4 eggs (4 telur)
  • 350 gr cabbage* (350 gr kobis, iris tipis2)
  •  4 tsp dried ebi* (4 sdt ebi kering)
  • Oil (minyak)

    Toppings 
     
  • Okonomi Sauce (or homemade Okonomi Sauce)
  • Japanese mayonnaise
  • Hana Katsuo (Katsuobushi)
  • Green onions, finely chopped
  • Pickled Ginger for garnish
  • sambal sauce also match with this :D

    how to :
     
  • In a large bowl, combine flour, salt, sugar.
    (Dalam mangkuk besar, aduk tepung, gula dan garam)
  • then add Dashi stock or water with dashi powder.
    (tambahkan kaldu dashi/campuran dashi + air)
  • add finely chop cabbage (finer the better). 
    (masukkan irisan kobis, aduk rata)
  • In the bowl, add eggs, dried ebi and mix well.
    (lalu tambahkan telur, ebi kering dan aduk rata).
  • In a frying pan heat oil on medium to medium high heat. (do not add to much oil). Scoop one ladle of batter and place on the pan. Do not flatten the mixture because it will easily break when you turn it over.
    (Dalam wajan/teflon/wajan martabak juga boleh, panaskan sedikit minyak, ambil satu skup adonan, letakkan di penggorengan -ini sesuai selera, jika menginginkan okonomiyaki-nya 1 lingkar besar bisa ditambah, saya lebih prefer ke 1 sendok sayur, karena memudahkan anak-anak untuk memakan).
  • When the bottom side is nicely browned, turn it over and cook covered for another 5 minutes.
    (jika satu sisi telah matang, balik agar sisi lainnya matang)
  • I Apply Homemade Okonomi Sauce and Japanese mayonnaise, and sprinkle Hana Katsuo, green onions and if you like something spicy you also can add sambal sauce on top for garnish.. but don't add the sambal sauce for your kids okonomiyaki :))
    (beri toping di bagian atasnya, saya menggunakan homemade okonomiyaki sauce, mayonaise, hana katsuo, irisan daun bawang, serta untuk saya dan suami saya tambahkan saus sambal :D)

 so, the result is..yummy.. :) my 16 mos girl also love it... hehe. What a great okonomiyaki party night :D. This recipe serve big portion for us ( 2 adults and 2 kids), because we also already had dinner.. so i left 1 big portion for morning meal.

but..it's better eat when it fresh.. except you already full like us that night :D
